An experienced chef and culinary creator, I am passionate about the tradition and flavors of my country. Along with my friend Justo, I opened a few years ago “Ivan chefs Justo”, one of the most renowned restaurants in Havana. After its success, I decided to roll the dices again and launched "Al Carbón", a place providing sharp contrasts with my first, but also focusing in delivering my interpretation of Cuban cuisine.
You’ll learn how to elaborate dishes based on Cuban cuisine recipes that are over 100 years old, using daring and modern strokes while preserving their authenticity. This will allow us to create new textures, aromas and innovative flavors that will greatly improve the gastronomic experience. We will combine the most diverse natural products using your creativity. We will also find the right beverage to pair our dishes with. While we cook, we will talk about Cuban cuisine evolution, it’s impact in my restaurant’s identity and in the identity of my culinary art for the past 30 years.
We’ll meet at Iván Chef Justo restaurant, located in the corner of Aguacate # 9 and Chacón in Old Havana. We’ll meet at 11:00 a.m., one hour before the opening time in order to have more privacy. We will spend the entire time in it.
